Quick and Easy Dinners

Rich made this one up and it's not bad. But I don't like steak so not sure how it tastes but the kids and Rich love it.

Keep in mind that I'm cooking for a family of 8, so if you don't have a large family or big eaters cut the recipe down to fit. Also, I don't use recipes word for word either, I just start throwing stuff in a bowl and mixing it up (a little of this, a lot of that kind of thing).

*Brown both sides of eight pan (round) steaks in a skillet. Take two cans of cream of mushroom soup and one soup can of milk and stir it all up. Put the steaks in a baking dish with the soup mixture (it becomes the gravy). Make some mashed potatoes and serve with the steaks and "gravy". Keep the steaks warm by putting them in the oven at 200 degrees until the potatoes are done. Season to taste.

*You can do the same thing with chicken (smothered chicken kind of thing) by using boneless, skinless chicken breasts and cream of chicken soup.

*Another easy chicken recipe is chicken parmesan (again I just made this up so no recipe per say).

chicken breasts (boneless, skinless) (I use chicken tenderloins)
Italian seasoned bread crumbs
olive oil
egg
spaghetti sauce
provolone or mozzarella cheese

Splash a drop or two, whatever of olive oil in a skillet. Take
chicken dip in the egg and then cover it with the bread crumbs.
Throw it in the skillet and cook it on medium heat. Turn over half
way through cooking. Be careful not to lose the coating on the
chicken.

Use a casserole/shallow oven dish, put some spaghetti sauce in the
bottom (just a thin layer or so). When the chicken is done, put it
on top of the sauce. Top with the cheese and a small amount of
sauce. Bake for about 20-30 minutes, around 200-250* long enough to
make some pasta and the cheese to melt. Serve with the pasta.

Nothing fancy, but it is yummy and really easy!
